5.21 KITCHEN CHEF-IN-CHARGE RESPONSE
5.21.1 If evacuation is necessary, the Chef in charge to turn off all gas and electrical supplies.
5.21.2 Instruct all staff to proceed to assembly point for roll call.
5.21.3 If fire originates from kitchen, the Chef in charge to do the following:
- Dial ‘…….’ and furnish name and location of fire.
- Deploy available staff to combat fire with fire extinguishers and equipment.
- Switch off all power and gas supplies except the lighting.
- If an explosion is likely to happen, evacuate all staff from the area.
- Assume command until arrival of Emergency Response Team.
- When fire is extinguished, to assist Engineering in loss assessment.
