The basic problem in quality assessment originates from its nature as a multifaceted concept: it can be viewed as an absence of defects or a degree of excellence and it means different things to different handlers within the distribution chain and to consumers (Shewfelt, 1999). When consumers are asked to express their own quality evaluation, they weigh actual tasting with previous experiences, familiarity with the product and available information. Among EVOOs selected for testing, L1 is among those considered by experts
