2.7. Color
Hunter’s color parameters were measured in the vegetables
after processing. A Minolta CM-2002 spectrophotometer (Minolta
Camera, Co., Osaka, Japan) was used in the reflection mode. A white
ceramic plate was used for standardizing the instrument. Lightness
to darkness (L*), redness to greenness (a*) and yellowness to
blueness (b*) were quantified in all of the vegetables at least in four
different points of both the untreated and treated product.
Color functions such as net color difference, hue angle and
chroma were also quantified as follows. The net color difference
(DE*) was determined using L*, a* and b* values, comparing them
with the values of unprocessed samples:
