It could be concluded that oil of cardamom seeds can easily be recovered by sub- or super-critical fluids even with single
extraction. Cost of extraction can be extremely reduced by applying propane at sub-critical conditions. Extraction by sub- or super-critical fluids seems to be very convenient to produce cardamom oil that retains its original volatiles. It is recommended to increase the antioxidant content of extracts in order to retard oxidative damage of the essential oils of the products by either fortification with synthetic antioxidants or supplementation with oils from plant sources having high level of tocopherols provided that the supplementing product should have no or negligible odor or aroma profile.
