The energy and exergy analysis of thin layer drying of carrot slices was investigated in continuous band dryer. The results of this research were compared with the results in literature. The results of EUR and exergy efficiency demonstrated the high energy efficiency of the continuous dryer over the tray dryer, and in particular compared to the middle and end of the tray drying time. The weight loss of the outlet dried products, energy utilization, energy utilization ratio and exergy loss increased with increasing of drying temperature but exergy efficiency decreased with increasing of drying air temperature. The weight loss of the outlet dried products, energy utilization, exergy loss and exergy efficiency increased with increasing of air velocity but energy utilization ratio decreased. Weight loss of the outlet dried products, energy utilization, exergy loss and energy utilization ratio decreased with increasing of feeding rate but exergy efficiency increased with decreasing of feeding rate.
