In SG L. monocytogenes was able to grow in cheese paste during shelf life in refrigerated condition. This behaviour, in the presence of paste contaminations at the end of production of 2 log cfu g1 (B), 1 log cfu g1 (C) and 0 log cfu g1 (D), led to the overcoming of the limit imposed at consumption by Commission Regulation No. 2073/2005 after only two weeks.
