Overall, lag phasewas
of 4 days under BP and PUA and increased to 8 days for total bacteria
and lactic acid bacteria, under MAP. The Pseudomonas bacteria
showed fast growth from day 3 to day 4, in BP, but did not increase
afterwards. These bacteria, under MAP, did not increase significantly
until the end of the storage period (only 1 log CFU g1). In BP
we observed fast growth of psychrotrophic aerobic bacteria,
reaching mean counts higher than 5 log CFU g1 after 8 days of
incubation. In average, growth rates for mesophiles, psychrotrophs
and lactic acid bacteria were similar, independently from the
packaging form (Table 2).
