Complementary to the loss of intensity in compartment 1, the signal intensity of compartments 2 and 3 were found to increase significantly at a significance level of p < 0.05 after processing at 400 MPa.
The reduction in water in compartment 1 (vacuole) after the 400 MPa treatment, simultaneous with an increase in the signal intensity of compartment 2 (cytoplasm)and compartment 3 (cell wall) at the same pressure level,
indicates the transfer of water from the vacuole to the cytoplasm and cell wall.
