Tapioca starch was obtained from Local market, Erode. The
Landers et al. (1991) method was used for determining the amylose
and amylopectin content of tapioca starch. Ash, moisture, and
starch contents were determined according to the AOAC (1995)
techniques. Glycerol (98% purity) and span 80 (99% purity) were
purchased from Merk chemicals, Mumbai. Agar was supplied by
Hi-media Chemicals, Mumbai.
