In previous researches, the decomposition of aflatoxin B1 by ozone in peanuts has been determined, but the safety of ACPs treated by ozone has not been evaluated by any studies. This study further verified that aflatoxin B1 could be mostly decomposed by ozone, which significantly reduced the liver and kidney damages and improved blood biochemical indexes, thus decreased the risk of cancers of test animals.
Based on the ozonolysis efficiency and safety assessment of AFB1 in peanuts, these results provide the guidance for the food industry to decrease AFB1 in peanuts or other foods for the sake of food safety and health of consumers, and also lay the groundwork for additional studies to further investigate chronic toxicity of AFB1 in foods.
