(Table 1) with an average of 1.10 ± 1.18% and 0.98 ± 1.54%, respectively.
Most of the FOGs isolated were solids at room temperature
(approx. 26 C) and most of them melted between 60 and 70 C.
The highest melting point observed was 89.7 C and the lowest
was 26.0 C (Table 1). Melting points higher than 80 C were
observed for FOGs isolated from wastes produced by firms that
also cooked the birds by deep frying. Not surprisingly, it was
observed that the melting point of the FOG was related inversely
to its content of unsaturated fatty acids (see Tables 1 and 3).
