Rehydration moisture content was estimated by reconstituting
the dried carrot slices in boiling water for 3–15 min
(Maskan, 2001). The samples were collected by draining residual
water and surface moisture was removed using Whatman
No. 1 filter paper. The moisture content of the samples was
measured by oven drying method. The rehydrated moisture
content was reported as percentage on a wet weight basis.
