Lactobacillus brevis NBRC
12005 (Ueno, Hayakawa, Takahashi, & Oda, 1997), known for its
high GAD enzyme activity, was taken as a control population and
was acquired by the Biological Resource Centre (NITE) of Japan.From all colonies tested (10 58 cheeses), the ones qualitatively
showing GAD activity similar to the control strain were selected
and used in further steps. They were preserved in the form of pure
culture cryobeads at 80 C.
