CFG is very effective for stabilizing limonene oil-in-water
emulsions. The adsorbed CFG fraction has been found to contain
a significant amount of proteinaceous material and it is believed
that this facilitates the adsorption of the molecules onto the surface
of the oil droplets and is responsible for its emulsification properties.
The high molecular weight CFG molecules, which are rich in
protein, are the most active emulsifier.
