Decline in diameters of peas for both drying methods can be clearly seen in Table 2. The decrease was more for open sun dried pea and drying method was found to be significantly effective on diameter. As in the case of diameters, shrinkage of the peas for two drying methods were significantly different and the shrinkage in open sun dried pea samples was higher. Higher shrinkage in open sun dried samples can also be observed from the pictures of dried pea samples (Fig. 4). The difference in the shrinkage for two drying methods was probably due to the rate of drying which was higher for solarassisted spouted bed drying. In the study of drying of carrots in fluidized bed, it was stated that shrinkage was inversely proportional with the drying rate (Hatamipour and Mowla, 2002).
