consumer acceptability and preference, all the flavored oils
were appreciated in a greater extent than the sole oilAlthough the flavored olive oils with a number
of herbs have been widely used in the Mediterranean cuisine and
are appreciated for their organoleptic superior quality by the customers,
other types of flavored vegetable oils were few introduced
in the commercial market due to the limited data regarding the
solubility and selectivity of vegetable oils and the relevant extraction
process as well.
