3.2.2. Unpressurized control samples
Microbial counts of unpressurized control samples (data not
shown) demonstrated, under our conditions, no significant cell
damage was induced by freezing or by heating (5/45 C), therefore
suggesting the need for pressure to ensure substantial
perturbation to the cell structures. No microbial inactivation was
observed by Picart et al. (2005) and Hashizume et al. (1995) after
freezing at 0.1 MPa Listeria innocua and Saccharomyces cerevisiae,
respectively.
