3.4. Amino acid composition of HS and EpSSs
The amino acid (A.A.) compositions of the EpSS were compared with the HS (Fig. 3). With an increase of the amount of ethanol added, the content of serine, aspartic acid and threonine are increased whereas those of alanine, glutamic acid, leucine, isoleucine, phenylalanine and histidine are decreased. Overall the A.A. composition of EpSS becomes similar to that of HS as the amount of ethanol added increased, due to the high yield (Table 1). An interesting point is that the composition of hydrophobic A.A. is higher in EpSS25 than in EpSS75 (Fig. 4).
