• These type of contaminant occur during the processing and production of foods such as PAH, chloropropanol and nitrosamine
• PAH formed during barbecuing, grilling meat or human exposed from air pollution and from cigarette smoker
• PAH: genotoxic, immunotoxic, carcinogenic
• Chloropropanols: genotoxic animal carcinogens such as 3-monochloropropane-1,2-diol (3-MCPD) by product in soy sauce and in hydrolyzed
vegetable protein through acid hydrolysis
