Moisture, lipid and ash contents of H. courbaril L. pulp and seed were determined by following the standard
AOCS methods(2009). Proteins were quantified by the Kjeldahl procedure, using the general factor (6.25) to
calculate the total protein (AOAC,2005). Crude fiber determination was done according to Proskyet al. (1984)
method. Carbohydrates content was calculated by subtracting the sum of the percentages of moisture, lipids,
protein, ash and fiber from 100%. Calories were calculated according to the Merril and Watt (1973) method.
