No bacterial growth or histamine production occurred when the NaCl content in TSBH was increased to 20%. Taylor and Speckard (1983) reported that NaCl at 0.5-2.0% did not inhibit the growth of M.mor and K.pneu, and their histamine production. The E.cloacae from salted anchovies and salted mackerel produced histamine in culture broths that had a NaCl content of 0.5 or 3%,
