The results inTable 4 revealed that the yields of both capsaicinoids and red pigments are higher from FRPs than those fromDRPs. In details, the yield of capsaicinoids from FRPs was about 25%
higher than that from DRPs by thermal drying oven at 50C.
However, the yield of red pigments from FRPs was about 2.2-fold
that of DRPs, which is basically agreed with that previous observation (Major pigment losses have been described by applyingconventional air-drying techniques during industrial processing
with a decrease of ca. 60% in total carotenoid content (MinguezMosquera et al., 1993)).
