In the production of white wines, on the other hand, the grape
pomace is separated from the juice after pressing as an intact byproduct.
The seeds of this pomace are an excellent source for
procyanidin recovery. In fact, commercial grape seed extracts
(GSE) enriched in oligomeric procyanidins (OPC) have been
produced for years because of their high antioxidant activity.
The OPC are also found to be effective in inhibition the oxidation of
low density blood cholesterol (LDL), as they lower blood pressure,
improve vascular function, suppress inflammatory and allergic
processes, etc.
