Using culture
dependent methods, Zhang et al. (2009) isolated 97 isolates of Lactobacillus
sp. and 2 exopolysaccharide (EPS)-producing isolates; Lactobacillus casei
and Lactobacillus plantarum were the most abundant. Lactobacillus brevis,
L. plantarum and Leuconostoc mesenteroides have also been isolated
from naturally fermented suan-cai liquid and identified using classical
methods (Liu et al., 2009).
