Since fiber-rich passion fruit co-products obtained from pulp and
seed or albedo are available in large quantities as a co-product of
juice production, it could be used as an intermediate food ingredient
(IFI) in the development of functional foods because of its interesting
antioxidant and antibacterial activities. In addition, these fiber-rich
co-products have potential applications as ingredients in products requiring
hydration, viscosity development and freshness preservation,
such as baked foods or cooked meat products, due to their high total
dietary fiber content and good technological properties, especially
their water holding and swelling capacities.
