Although lycopene is not stable during long heating times and was approximately 53.5% degraded after 60 min at 100 _C through isomerization or auto-oxidation (Boskovic, 1979; Mayeaux, Xu, King, & Prinyawiwatkul, 2006; Shi & Maguer, 2000), total lycopene contents still increased during the thermal processing of tomato products due to the elevated release of lycopene from the skin tissue matrix (Dewanto, Wu, Adom, & Liu, 2002; Seybold, Frohlich, Bitsch, Otto, & Bohm, 2004; Toor & Savage, 2006). For SC-CO2 fluid extractions, the enhanced release of lycopene from the insoluble fibre portion of tomato skin may also contribute to the increased yield.
