the juice extraction from the pseudo fruit, represents approximately 20% of its total weight, and is one of the largest sources of wastes in the agronomic industry sector [2,3]. Although some studies investigated the use of this agro industrial byproduct for obtaining value added products, such as ethanol and xylitol [4–6],pectinases [7] and tannases [8], its current utilization has been limited to nutritional supplements for animal feed [9]. Thus, it is necessary to conduct further studies to evaluate their use in the production of high value added products.
