Maturity
Ginger rhizomes (Zingiber officinale Roscoe) were harvested from Petchaboon province, Thailand. The www.scienceasia.org ScienceAsia 36 (2010) 41 ginger rhizomes were divided into 3 groups according to their age of 4–6, 7–9, and 10–12 months. Moisture content 9 , fibre 9 , density10, and 6-gingerol content 11 were determined. A completely randomized design was used to study the factors affecting ginger rhizome maturity.
