This is the first work reporting that S. cerevisiae LC3, if used as starter, has a potential in improving the nutritional quality of cereal-based products due to its phytase activity during only 2 h of dough fermentation.
Although further study is needed, the preliminary results shown here indicate that S. cerevisiae LC3 could be also used as probiotic for humans or animals to hydrolyse phytate under GI level.
