Apple pomace is a valuable source of polyphenols relevant for their antioxidant activity, as flavanols and flavonols. The antioxidant activity of apple pomace should be mainly related to apple cultivars, and it resulted to be equivalent to that previously reported for fresh apples. The apple pomaces coming from the cider-making industry exhibited lower, but still appreciable antioxidant activity than the single-cultivar samples considered in this study, which can be attributed to differences in their phenolic profiles. Both DPPH and FRAP assays, with optimised reaction times, allowed to perform reliable routine determinations of antioxidant capacity of apple pomace, and provided equivalent results.
