Plant Material and Processing of Samples
Fresh garlic (A. sativum L.) bulbs were purchased from a
local market inWrocław (Poland); however, they came from
a different Polish city, Krakow. Fresh bulbs were purchased
in their optimal stage and were immediately transported to
the Institute of Agricultural Engineering (Wrocław
University of Environmental Life and Sciences).
Garlic bulbs had initial moisture content (M0) of 1.19 g of
water/g of dry matter. Bulbs were manually peeled, and
individual cloves were cut into slices of 5 mm thick.
Garlic samples of approximately 60 g were dehydrated until
three levels of final moisture content were achieved using
two drying protocols:
