DSC was employed in this study to determine whether or not
the presence of either fibre or x-3 oil added separately to surimi
or in combination (fibre + oil) affects thermal denaturation of myosin
and actin. All treatments showed peak one, associated with
myosin denaturation starting at approximately 30 C and peak
two, associated with actin denaturation starting at approximately
62 C. For all treatments DH was much greater for myosin than actin,
indicating a greater energy input required for myosin denaturation.
Myosin also showed a broader peak, confirming that its
denaturation does not occur at one temperature, but over a temperature
