Nineteen representative commercial milk- and soy-fruit juice
beverages elaborated from concentrates (7–50%) of different fruits
were evaluated. Sample description is detailed in Table 1. The samples
were purchased in several local supermarkets (Madrid, Spain).
In the laboratory, the beverages were kept under refrigeration
(4 ± 1 C) up to the time of analysis. These mixed beverages were
grouped according to the principal fruit ingredient and the participation
of either skim milk or soy: (A) orange as main ingredient
and milk, (B) other fruits different from orange (pineapple, apple,
grape) and milk, and (C) different fruits combined with soy.
