In the first part of this study, the direct effects of ultrasound
processing on lycopene were fully evaluated. Such effects were
evaluated by means of sonication of pure lycopene dissolved in
ethanol 95% v/v subjected to different ultrasonic frequencies, different
power densities and different temperatures. The experiments
that were carried out with pure lycopene solutions did not
present any significant change on lycopene concentration, indicating
that direct application of ultrasound did not affect lycopene. No
significant degradation of lycopene was observed.
