INGREDIENTS
4 Large eggs
1/3 cup (about 75g) minced pork
6-8 small to medium shrimp, peeled and deveined.
1 small dry cauliflower fungus (optional)
1 medium size tomato, cut into thin wedges.
2 stalks spring onion cut into 4cm (1.5″) slices
2 tablespoon neutral taste cooking oil.
DRESSING
1 1/2 tablespoon lime juice, freshly squeezed
1 1/2 tablespoon fish sauce
1/2 teaspoon granulated sugar
2-6 bird’s eye chilies
METHOD
1. Soak the dried cauliflower fungus in boiling water to rehydrate, for about 10 minutes.
