The training of hospitality employees has been researched from a wide number of
perspectives ranging from the extent of training being given to hospitality employees
(Conrade et al., 1994) to the effectiveness of training programmes (Tracey and Tews,
1995). The Cornell Hotel and Restaurant Administration Quarterly regularly addresses
training and education issues in its ‘Educators’ Forum’ segment, with articles questioning
whether industry needs have been met (Goodman and Sprague, 1991) to the
question of who should be hired to teach hospitality courses (Lefever and Withiam,
1995). With increasing evidence of the positive relationship between training and
higher levels of job satisfaction, organisational commitment and lower turnover rates,
training is also gaining more extensive coverage in hospitality HR texts (e.g. Go et al.,
1996).
