The microbiological parameters of lamb paˆ te´ were assessed
according to the criteria established in the RDC n8 12 of 2001
of ANVISA (Brazil, 2001). The samples were analyzed for
the most probable number of thermotolerant coliforms
and coagulase positive Staphylococcus following the methodology
recommended by APHA (2001); the concentration
of sulphite-reducing Clostridia by the methods of ANVISA
(Brazil, 2001); and concentrations of Salmonella sp. by the
methods of the US FDA (2011).
