for the cultivar 2B587 Hx at all temperatures, with significant differences
(p < 0.05) at the temperatures of 50 and 60 C, and average
differences of 9% at the four temperatures. Therefore, it was found
that the initial water absorption rate of the conventional corn grain
was, in average, 9% faster than that of the transgenic corn grain. The
hardness of corn endosperm is a consequence of the strong
compression of the starch granules, moreover the endosperm have
a protein network (Haros et al., 1995).
