It is important to optimize the extraction process to obtain a high
yield of eggshell membrane collagen.
Acetic acid and pepsin concentrations,
reaction time, pH including NaOH concentration,
alkali-treatment time and extraction temperature are the most
important variables affecting extraction yield and functional properties
of the collagen extracted. Response surface methodology
