Collectively, the L. plantarum membranes from cultures grown in MRS with 8% ethanol contained an approximately 2.7-fold-lower ratio of unsaturated fatty acids (USFA) relative to saturated fatty acids (USFA/SFA = 2.85 ± 0.29) compared with control MRS cultures (USFA/SFA = 7.80 ± 1.20) (Fig. 3).
