Weight loss of osmotically dehydrated and CaCl2 (OD-CaCl2) infused purple
sweet potatoes are shown in Figure 1. The results showed that weight was
continuously decreased in the samples during storage under room temperature and a
low temperature (4˚C). Weight loss in the potatoes was ranged from 11.29 to 19.92%.
The different temperature storage was significantly influenced the weight loss in
osmotically dehydrated potatoes. The samples stored at room temperature was losing
weight in the potatoes more quickly than under 4˚C. Similarly, weight loss of potatoes
was increased gradually throughout the storage under a low temperature. However,
when compared to the room temperature, a low-temperature storage was better
controlled of weight loss in OD - CaCl2 infused purple sweet potatoes. The OD - CaCl2
treated purple sweet potatoes under room temperature storage had higher weight loss
in potatoes, and it could be evaporation of OD solution that infused in potatoes. On
the other hand, at a low temperature the samples were not induced of evaporation
accelerated weight and whereas, the increased of weight loss during storage might be
the cause of respiration (Costello et al., 2010). Ferrari et al. (2010) reported that ODCaCl2 Salt infused melon was found increased of weight loss during storage. The
osmotically Dehydrated purple sweet potatoes could able withstand for 25 days under low-temperature storage. Whereas, room temperature storage was not successful on
extending the shelf life (10 days) of potatoes due to microbial growth (see Figure 5).
