The orange juice was spray dried using a Buchi-B290 spray dryer at an inlet air temperature of 150 C, a pump rate of
4.9 ml/min, an aspirator flow rate of approximately 35m3/h, and an atomizing air flow rate of 536 Nl/h. All experiments were
performed in triplicate. The powders were placed in air-tight plastic bags and were used for the experiments immediately.
