The pork mineral contents showed variable responses to the pig
rearing systems. There was no detectable variation in the pork for
macro-elements (Na, Mg, K and Ca) despite the different levels of dietary
intake especially for Mg and Ca. No statistical difference of Mg
and Ca values was also observed in the edible part of organic and conventional
eggs (Kucukylmaz et al., 2012). Na and K are key factors to
maintain the physical relatively stable osmotic pressure and participate
in nerve excitement. So generally the levels of Na and K are different due
to the varieties other than feeding regime (Jukna et al., 2013; Wang,
Huo, & Ren, 2008).
The contents of Mg and Ca in the organic pork are
not statistically different compared to conventional pork.
It could be explained
by the free access to soil and tiny stones as abundant reserves of
Mg and Ca. Zhu et al.
