Protein concentrations in coconut milk emulsions were determined by centrifuging each emulsion into tubes and separating the cream or oil droplets from the aqueous phase. The lower aqueous serums were collected and filtered. Interfacial proteins were removed by adding sodium dodecyl sulphate aqueous solutions and storing overnight. Protein concentrations were determined using Lowry's method, using bovine serum albumin as a standard. The reported protein amounts were calculated from the weight of detected proteins over the initial emulsion sample.
