Additionally, the base gels were employed as base to develop energy gels, specifically glucose gels. These energy gels are usually employed to practice sports, like cycling, that require a prolonged and intense effort. The formulation was slightly modified for this application, a 10% of glucose was added to granule gel (the egg yolk fraction with lower fat content and higher protein content); this product is shown in Fig. 7. Furthermore, other additives, such as edible colorants, can also be included in the energy gel formulation, some examples employing different coloring (red, yellow and green) are also shown in Fig. 7.
