Dehydrated samples (w2.5 g) were analyzed for moisture con-
tent using IR moisture meter (Denver Instrument, Bohemia, NY,
USA). Titratable acidity of dehydrated mango was determined by
taking 0.5 g of sample in 20 mL distilled water, adding two drops of
phenolphthalein and titrating against standardized 0.1mol/L NaOH solution.
