TheWAI shows the amount of thewater uptake by per unit mass
of dried powder. TheWAI of dried mango powder was 2.54e3.14 g/
g db (Table 1). Statistical analysis revealed WAI varied significantly
with types of drying systems in three samples (p 0.05). Present
results revealed lower WAI values for mango powder as compared
to those reported previously. Statistical analysis revealed that OAI
of dried powders (1.69e2.75 g/g db) differed significantly with the
drying method used.
