Soy proteins are used in many foods. Traditional soy-based foods include soy milk, tofu, and soy sauce. 'Fabricated foods' involve the use of soy-protein isolates to produce meat analogs, frozen desserts, beverages, coffee whiteners, soups and sauces, pizza toppings, and various bakery products. Soybeans contain some anti-nutritional factors, but these difficulties can largely be overcome by heat treatment.
