; For each experiment, the dryingwas interrupted and the sample
was taken out and then weighed by electronic balance, continuous
drying experiment on similar weight was conducted to examine
the effect of this interruption during drying on weight loss and it
was found the effect was negligible (Cui et al., 2003, 2004). The
temperatures of the fish slices during drying were monitored by a
digital probe-like thermometer (Model XMD-16, Automatic
equipment Ltd. Co., Shanghai, China).
