3.2. Particle size distributions of rice flours
The PSD patterns of rice flours are shown in Fig. 1. The curve
patterns of PSD of rice flour exhibited a large peak ranged from 40 to
500 mm for cell particles containing protein matrix holding starch
granule and a small peak from 40 to 2 mm for a starch granule
fraction. As PSD of rice flour decreased, the particle size at the
maximum size of large peak decreased and the relative ratio of small
peak (starch granule fraction) increased. The usage of rice flour was
predicted with PSDs as it was done with wheat flour. When wheat
flour is classified into three types with protein contents for application,
the patterns of particle size distributions for strong, all purpose,
and weak flour were similar to those for rice flours.
